Go buy lots of Doritios and a sh*t-ton of chicket breast. NOW!

Chile Rellenos Chicken! (it's from a Pampered Chef book) (paraphrased in ceece-speak)

2 egg whites
Chicken breast
Lime juice.
1 Clove of Garlic.
Strips of Green Chile's
Shredded Mont Jack Cheese

Preheat oven to 400 degrees

In a bowl mix the egg whites, lime juice and garlic until frothy.

In another bowl smash the hell out of some Doritos.
Coat your chicken on the egg mixture then coat with the doritos and place on pan.

Back at 350 for 18-20 minutes or until chicken is just slightly pink, pull out and place chile's and cheese and back for another 3-5 minutes.

SO FREAKING GOOD, and ohmygawd how easy?

    Just kidding. I utilize the hell out of nap time and plunk lilli-bug in the high chair while I'm cooking. Conner is just now able to play by himself in the backyard for a few minutes.
    Believe me this is all brand new territory for us too! You'll get there. :-)
