mmm foood.

With Adam needing pretty big amounts of protien to just function throughout the day and myself not really eating much red meat at all, sometimes it's a struggle to find meals that we will all eat and have enough of all the right stuff.

Last Wednesday I made a modified quiche that will probably get added to our regular rotation here at the house. It's below if you're interested.

1 refrigerated pie-crust
8 eggs
1/2 c milk
1/2 cup of diced mushrooms
1/2 cup of diced onions
1/4 cup diced red pepper
1/2 package of frozen spinach thawed
2 bags of shredded cheese (any flavor you like, we use the mix of three different kinds)

Heat oven to 425 cook for 45 minutes or until top is brown.

Place pie crust in pie pan. cover entire crust with aluminum foil and place in oven for 7-10 minutes or until crust is set. Remove from oven.

Mix eggs, milk, cheese, onions, pepper, spinach, mushrooms in large bowl. Pour into pie crust and bake for 45 minutes or until top is brown.

I served this with a loaf of French bread and it was awesome.

  1. Wow! That sounds so yummy, but it has a TON of cheese in it! Are the bags 8 ounce bags of cheese?

  2. well you don't have to use that much cheese, but it's totally worth it!

  4. I love quiche! I made a stilton and leek quiche not so long ago that was delicious!!
    Quiche is a Christmas morning tradition for us.
